1844: A Printed Turning Point
1844, Istanbul
Mehmed Kâmil's “Melceü't-Tabbâhîn”, printed in 1844, is considered the first printed Turkish cookbook; names still familiar today — tas kebabı, imam bayıldı, su böreği — already appear in those early records. Continuity of a name is valuable, but a first written record is not a birth certificate: today's pot need not match that day's recipe.
