Kete
regionalOther names: Kömbe
A pastry of the Erzurum and Kars region: a filling of flour roasted in butter is spread over the dough, rolled up and baked on a griddle or in the oven. It is the classic of tea time and of food taken on the road.
The filling is made by roasting flour in butter; the dough is rolled thin, the filling spread and rolled up, then baked slowly over moderate heat.

Shortcuts worth knowing
How to order
The same dish changes name from city to city. Asking about an unfamiliar name is the shortest route.
Pick the good one
In su böreği the measure is hand-rolled dough, not the number of layers; machine sheets turn rubbery.
Right time
Pide and lahmacun are eaten the minute they leave the oven. Wrapped in paper, steam softens the dough.
