Urfa Kebab(Urfa Kebap)
classic
The mild sibling of Adana kebab; in the tradition of Şanlıurfa, the flavor of isot is prominent, but the spiciness is balanced. The taste of the grill and the quality of the meat are defining characteristics.

Table balance
Taste: spice, hot
- Alongside
- Pickles or an onion-and-lemon salad: acidity cuts the fat and lightens the plate. Cacık or plain yogurt: dairy tames chili heat far faster than water does.
- To drink
- Ayran (salted yogurt drink) or turnip juice — the classic partner to a rich meat plate.
- Afterwards
- Plain brewed tea; if you still want dessert, keep the portion small and wait a little. After a spice-forward plate, a plain herbal infusion clears the palate.

Shortcuts worth knowing
How to order
In spiced kebab the chili is mixed into the mince and cannot be dialled back later. Order it plain and ask for the chili on the side.
Common myth
The fat in kebab is not a sign of poor meat: tail fat is the traditional ratio that keeps mince from drying over fire.
Pick the good one
Look at the fire: kebab wants embers, not flame. Open flame chars the outside and leaves the inside raw.

These are also easy to miss
- What is the difference between Adana and Urfa kebab?
The difference is in the mix, not the cooking: Adana carries hot pepper, Urfa does not. Both use hand-chopped mince with tail fat, grilled over embers on a flat skewer.
- Flame or embers on the grill?
Meat cooks over embers, not flame. Flame chars the surface, leaves the inside raw and adds a sooty taste; embers give even heat. When dripping fat flares up, raise the grill or push the coals aside.
- How do you ask for less heat?
When ordering, saying “acısız olsun” (without heat) or “az acılı” (mildly hot) is enough; most kebabs and wraps are made to the heat you ask for. Where heat is added at the end, isot and pepper flakes sit on the table so you set it yourself.
