Harput Kofte(Harput Köftesi)

The soured kofte of the Elazig-Harput tradition: small balls kneaded from fine bulgur and minced meat are boiled in broth and soured with pomegranate molasses or tomato paste. It is a dish of wedding and holiday tables.
The mixture is kneaded long and rolled to the size of an olive; the balls are boiled in simmering broth and the souring agent is added last.
