Table balance
Taste: sour, hot, spice
- Alongside
- Cacık or plain yogurt: dairy tames chili heat far faster than water does. Plain rice or fresh bread rounds the acidity and steadies the plate.
- Afterwards
- After a light main there is room for a syrupy dessert in this meal.
- Easy to miss
- Iced water only masks the heat for a moment; it comes back quickly.

Shortcuts worth knowing
Common myth
Turnip juice is mostly made from black carrot; the turnip is a supporting note, not the base.
How to order
The same dish changes name from city to city. Asking about an unfamiliar name is the shortest route.
Pick the good one
Turkish coffee foam is gathered at the first rise; boiled a second time, the foam is gone.
How to order
Chili is added to turnip juice at the end and cannot be removed: order it plain with chili on the side.

- Are bread and water charged for?
Bread is charged for in most tradesmen's restaurants, though the amount is small; in some places it is free. Water is always charged and comes bottled — tap water is not served. If you are asked “small or large”, that is the size of the bottle.
- When does tea come, and how do you ask for it?
Tea is drunk after the meal and comes in a slim-waisted glass. Saying “bir çay” is enough; for a weaker brew say “açık olsun”. In many restaurants the tea after a meal is a gift of the house, that is, free.
- What is the etiquette of a meyhane?
At a meyhane the table is laid slowly: cold meze first, then hot ones, and the grill last. Meze is shared; nobody guards their own plate. Not hurrying is the custom — a table can last three or four hours.
